My Recipe Box: Granola Breakfast Muffins



Today, I am excited to share my recipe for granola breakfast muffins. This is a post I originally shared back in 2016 but when I had a clear-out of posts, I archived this one. Now it's back! Mainly because I baked these this weekend.

Granola Breakfast Muffins (makes 12 muffins):

You will need:
  • 110g soft brown sugar
  • 110g salted butter, cut into small chunks and at room temperature
  • 170g clear honey
  • 220g plain flour
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 70ml milk
  • 1 tsp vanilla extract
  • 60ml plain yoghurt
  • 250g granola (I used this Jordans Simply Granola, which is actually one of my favourite cereals)

1. Preheat the oven to 170
°C.

2. Cream together the butter, honey and sugar in a large bowl until well combined, using an electric mixer if preferred.

3. Add the eggs to the butter mixture and combine.

4. In a separate bowl, sift together the flour, baking powder and bicarbonate of soda.
 
5. Then mix the yoghurt, milk and vanilla in a small bowl, stirring well.

6. Add half of the flour mix and half the yoghurt mix to the butter mixture and combine, before adding the other half of the flour and yoghurt.
 
7. Tip your granola into the mixture - this time, stir with a spoon so you don't smash up your chunky granola with an electric whisk.

8. Line a cupcake tray with muffin cases and fill them, but leave about a 1cm gap between the mixture and the top of the cake case, giving it room to rise nicely. 

9. Bake in the centre of the oven for 20-25 minutes or until a lovely golden brown.

10. Remove from the tin and place on a cooling rack.

These make a perfect breakfast treat and are great to make on a Sunday if you know you have a busy week ahead and could do with a breakfast on the go (which is exactly what I have just done!)
